What the hecks a Pacific Rice Lager?
History
This is our own creation, a blend of the crisp and refreshing Japanese Rice Lager and Australia’s own Pacific Ale.
Our Japanese Rice Lager is brewed with rice in addition to barley in the grain bill. Rice provides fermentable sugars for the yeasts that produce alcohol, while keeping the beer light in color and body. Hop bitterness is low but mildly perceptible using Japans own Sorachi Ace hops, providing a balance to the grain sweetness. during fermentation we dry hop this beer with Australia’s most popular hop and lead character in a pacific ale Galaxy do bring its own much loved tropical flavors.
The end result is a crisp dry refreshing beer perfect for our Australian climate, Just Like our boys TMDK are taking over Japan (and the world) our Galaxy Hops are bringing this Japanese classic to a whole new level.
Who Is TMDK?
The Mighty Don't Kneel or shortened to TMDK is a professional wrestling group, primarily appearing in the Japanese promotion New Japan Pro Wrestling (NJPW).
The Mighty Don't Kneel originated in Perth’s own Explosive Pro Wrestling (EPW) promotion, where it was a stable, including Mikey Nichols, Shane Haste, Elliot Sexton, Jonah Rock, Marcius Pitt and Slex.
TMDK has now become a global phenomenon with new members adding international blood such as the globally renowned Zack Sabre Jr and new Japanese sensation Kosei Fujita. there are TMDK members competing in all the leading Global companies such as WWE, NJPW, AEW, ROH and Impact. yet these global superstars are still proud to come home and support the local companies they once called home such as Perth’s own EPW to help build our amazing next generation of Australian wrestlers.
Australian wrestling has recently become a hot spot for up and coming talent thanks to our unusual blend of styles, our wrestlers are able to show of skills from Lucha Libre, European Style, Japanise Strong style and American Professional wrestling putting eyes onto our scene from all the major international promotions for our high list of skills and abilities.

What Makes Ours Different?
Galaxy Hops - Descended from German variety Perle, Galaxy is a unique Australian breed of hops that has the distinction of sporting the highest percentage of essential oils in the industry.
It has an amazing citrus, peach and passionfruit aroma, especially when used as a late addition. The flavor is often quite intense upon production but mellows as it matures. Galaxy enjoyed her first commercial production in 2009 after nine years of testing and quickly became popular both in Australia and overseas.
And What Else Is Used?
Rice Malt - It helps make the beer lighter in colour with a clean fresh palate pleasing flavour
Carapils - Made from the finest German quality brewing barley. this malt is characterized by a high proportion of dextrins and high molecular weight proteins. This makes carapils ideal for improving foam and its stability.
Sorachi Ace Hops - Sorachi Ace is a Japanese variety invented by Dr. Yoshitada Mori, while working for Sapporo Breweries.
Sorachi Ace presents a strange combination of characteristics. Notes of Lemon peel, lemon curd, and lemon grass create what is described as a boldly lemon character. Along with the lemon comes a quality most often recognized as dill, but can also present with spicy elements of coriander, tea, and/or spearmint.
The background has an oaky or woody cedar note. Bittering is clean
West European Lager Yeast - Bottom fermenting brewer’s yeast originating from Berlin in Germany. used for the production of fruitier and more estery lagers. Its profile gives beers a good length on the palate.
